Vanilla sugar
1 ½ tsp vanilla sugar can most of the time be substituted with 1 tsp of vanilla extract. You can also make your own. Get a pint size mason jar, fill it with granulated sugar, and add one vanilla bean cut into 1 inch pieces. Close up and store in a cool dark cupboard for 6 weeks. That’s it. Replenish with sugar as needed. You can also purchase Dr. Oetker vanilla sugar. One pack equals 1 1/2 teaspoons.
Crème fraîche
You need a pint size mason jar with lid, 1 pint heavy cream, and 3 tablespoons of buttermilk. Mix in the jar and let sit at room temperature for 2 days. Refrigerate and that’s it. Crème fraîche is a good substitute for butter on bread.
Vanilla Pudding
5 Tbsp cornstarch 1 egg yolk 2 cups milk ¼ cup sugar 1 tsp vanilla extract
Mix cornstarch with sugar, egg yolk and a little bit of the milk. Bring the rest of the milk to a boil. Add the cornstarch mixture and bring to a boil together. Take off heat, stir, and add the vanilla extract. Let cool completely.
