½ pound of chopped mixed vegetables (like carrots, asparagus, cauliflower, celery, leeks, cabbage, onion, parsley)
2 Tbsp butter
2 Tbsp flour
salt
5 cups water
¾ cup Quark
1 cup milk
Steam vegetables with a little bit of water, salt, and butter until soft. Sprinkle flour over it and add the remaining water, and cook a few more minutes. Strain liquid, puree and add milk and Quark.
