Onion Quark Soup
  • 1 ¼ cups Quark
  • ¾ cup buttermilk
  • salt
  • dash of pepper
  • 2 cloves of garlic, finely chopped
  • 3 shallots, finely chopped
  • 1 Tbsp butter
  • freshly ground pepper
  • 2 Tbsp chives

Mix the Quark with the buttermilk. Cook garlic and shallots in butter. Let cool down. Mix all of it (including chives and pepper) into the Quark and refrigerate. Serve cold.
