Greek Quark Soup
  • 1 ¼ cup Quark
  • ¾ cup buttermilk
  • 1 dash of salt
  • pepper
  • 1 small clove of garlic, finely chopped
  • 2 small dill pickles, finely cubed
  • 1 small cucumber
  • 1 Tbsp chopped dill
  • 4 Tbsp chopped chives
  • freshly ground pepper to taste

Peel and shred the cucumber, and let excess water drip off. Mix all ingredients and serve as a cold soup on hot summer days.
