Vienna Quark Apple Soufflé
  • 1 ¼ cups Quark
  • 2 cups buttermilk
  • bread crumbs
  • 3 stale Kaiser rolls, cubed
  • 2 eggs
  • 5 Tbsp sugar
  • 1 ½ tsp vanilla sugar or 1 pack Dr. Oetker Vanilla Sugar
  • some lemon rind
  • 6 Tbsp golden raisins
  • 3 apples
  • 2 Tbsp butter

Mix the Quark with the sugar and lemon rind. Cut apples in small pieces. Grease a nonstick baking pan line with breadcrumbs. Slide out excess crumbs. Layer alternating the Kaiser rolls, apples and raisins. Cover with the Quark mixture. Mix buttermilk with 2 Tbsp sugar and vanilla sugar and pour over the entire thing. Bake at 400F until golden brown.
