- 1 stick + 2 Tbsp butter, room temperature
- 8 egg yolks
- 8 egg whites
- ¾ cup sugar
- 1 ½ tsp vanilla sugar or 1 pack Dr. Oetker Vanilla Sugar
- 1 cup chopped hazelnuts
- rind and juice of one lemon
- 1 cup Quark
- 3 Tbsp buttermilk
- 2 tsp cinnamon
- 1 Tbsp butter
- 2 Tbsp breadcrumbs
- 4 peaches
- 1 cup sour cherry juice
Cream butter. Mix egg yolks, sugar, vanilla sugar, and hazelnuts. Mix Quark with lemon juice and rind, buttermilk, and cinnamon. Beat egg white until stiff. Mix Quark mixture with egg yolk mixture. Fold in egg whites. Grease a soufflé pan with butter and coat with breadcrumbs. Fill with Quark mixture and bake at 400F for 45 minutes. Blanch peaches in boiling water and peel, quarter, and remove stones. Reduce cherry juice on stove to half the volume. Add peaches to the hot liquid and let cool down to room temperature. Remove soufflé from pan and pour peaches over it.
