Austrian Shredded Quark Pan Cake
  • 2 ½ cups Quark
  • 1 cup milk
  • 4 eggs
  • 1 ¼ cups flour
  • 1 ½ teaspoon vanilla sugar or 1 pack Dr. Oetker Vanilla Sugar
  • 1 dash salt
  • 1 1/3 cups raisins
  • 2 Tbsp rum
  • ¾ cup sugar

Soak the raisins in rum or water. Mix the Quark with raisins, milk, egg yolks, flour, vanilla sugar and salt. Beat the egg whites until stiff adding the sugar slowly. Carefully lift the stiff egg white under the Quark mixture. Melt the butter in a large nonstick pan. Add mixture to the pan and cook as one large pancake golden brown on both sides. Tear into 1 inch pieces with two forks. Serve onto plates with powdered sugar and canned fruits, if desired.
