Austrian Quark Herb Strudel

Strudel dough:

  • 2 cups flour
  • 1 egg
  • ½ cup water

Filling:

  • 1 ¼ cups Quark
  • 1 ¼ cup boiled mashed potatoes
  • 1 stick + 1 Tbsp butter
  • 2 egg yolks
  • 1 clove of garlic
  • 2 Tbsp herb butter
  • salt

Prepare dough, first roll our and then pull thinly out over a floured flour sack towel. Mix the filling and spread over the dough. Carefully roll up with the help of the towel. Press all seams shut. Bake in oven on parchment paper at 350F for 40 minutes until golden crust has formed. Brush occasionally with butter while baking.
