Ham Quark Overbake
  • 5 cups Quark
  • ½ cup milk
  • 6 egg yolks
  • 1/3 cup cornstarch
  • ¼ pound cooked sliced ham, cut into ¼-½ inch pieces.
  • 1 small onion, finely chopped
  • salt
  • freshly ground pepper
  • ½ tsp thyme
  • 1 dash nutmeg
  • 3 egg whites
  • 3 Tbsp butter
  • 2/3 cup bread crumbs
  • ½ cup freshly chopped chives

Mix Quark, milk, egg yolks and cornstarch in a bowl. Add ham, onion, salt, pepper, thyme, and nutmeg, and adjust the taste if needed. Beat egg whites until stiff, and mix into the Quark. Grease an ovenproof dish with butter. Fill in the Quark mixture and smoothen the surface. Sprinkle bread crumbs and butter flakes on top. Bake in a preheated oven at 425F for 50 minutes. Sprinkle with chives. Serve with lettuce on the side.
