- 4 ripe peaches
- 2 cups buttermilk
- 2 ½ cups Quark
- 4 Tbsp powdered sugar
- rind and juice of one lemon
- 10 sheets of gelatin or 3/4 pack of Knox gelatine
- 6 Tbsp peach juice
- ½ cup heavy whipping cream
Blanch preaches in boiling water and peel. Cut in half, remove stone and slice peaches. You can also use canned peaches instead. Mix buttermilk with Quark, powdered sugar, rind and juice of one lemon. Soak the gelatin in water for 5 minutes and squeeze out excess water. Dissolve in hot juice and mix under the Quark. Fill half of it into a bowl, add the peaches, and the rest of the Quark. Refrigerate. Beat the whipping cream until stiff. Serve both cold.
