- 1 cup raspberries
- 1 cup blueberries
- 15 lady finger biscuits
- 6 Tbsp cognac or lemon juice
- 6 sheets of gelatine or 1/2 pack Knox gelatine
- 6 Tbsp warm milk
- 1 ¼ cups Quark
- 1 cup yogurt
- ½ cup milk
- ¾ cup sugar
- 1 egg white
Clean berries and let dry on paper towels. Squeeze some of the blueberries with a fork. Line the lady fingers onto a cookie sheet and drizzle with cognac or lemon juice. Soak the gelatin in water for 5 minutes, squeeze out excess water and dissolve in milk. Mix Quark, yogurt, and milk. Mix in the sugar. Beat egg white until stiff in mix into the Quark mixture with the gelatin. Fill half of it into a dish. Add fruits, and the rest of the Quark mixture. Cover with the soaked lady finger and refrigerate for 3 hours.
