Bavarian Quark Pudding
  • 1 cup bread crumbs
  • ½ stick butter
  • 2 ½ cups Quark
  • 2/3 cup sugar
  • rind and juice of ½ lemon
  • 4 egg yolks
  • 4 egg whites
  • 1/3 cup grated nuts or almonds
  • 3 Tbsp raisins

Shortly roast the bread crumbs in the butter and mix in with the rest of the ingredients with the exception of the egg whites. Beat egg whites until stiff and fold under. Fill into a metal pudding mold or cake baking form and cook in covered water bath for 1 hour. Serve with fruits.
