        ½ cup red wine1 cinnamon stick4 cloves1 pound prunes2 cups flour1 egg¼ cup sugar1 dash of salt1 stick + 3 Tbsp of butterflour for rolling out the dough3 ¾ cups Quark3 egg yolks2/3 cup cornstarch½ cup heavy cream3 egg whites1 ½ tsp vanilla sugar or 1 pack Dr. Oetker Vanilla Sugarrind of ½ lemonpowdered sugar for dusting Bring the red wine with the cinnamon stick and cloves to a boil. Wash the prunes and pour the red wine over the plum and let soak over night. The dough is being made this way. Put all the flour in the center of a board. Create a well in the center and add the egg, sugar and salt. Cut the cold butter into small flakes and place onto the flour ring. Use a pastry cutter to make the dough. Last make a smooth dough ball out of it with cold hands (rinse hand under cold water or use ice water). Wrap in plastic wrap and refrigerate for 30 minutes. Flour you working surface and roll out dough to a thickness of ¼ inch. Line a 10” springform with the dough building a 1” wall. Drain the soaked prunes, and remove cloves and the cinnamon stick. Spread them out over the dough. Place the Quark into a bowl. Mix egg yolks and cornstarch. Beat the whipping cream adding two thirds of the sugar slowly until stiff. Beat the egg whites in another bowl until stiff. Mix the rest of the sugar and vanilla sugar into it. Carefully mix the whipped cream, whipped egg whites and the lemon ring into the Quark without loosing volume. Spread the Quark mixture on top of the prunes. Smoothen the surface with a cold knife dipped into water. Preheat oven to 400F. Bake in the lower part of the oven for 55 minutes. Remove the cake from the pan and let cool on a baking rack.  Cover with powdered sugar. Cut into 12 segments. |
