Potato Quark Strudel

Dough:

  • 1 ¼ cups mashed cooked potatoes, cold
  • 1 ¼ cups flour
  • ½ stick butter, room temperature
  • rind of one lemon
  • 2 Tbsp buttermilk

Filling:

  • 2 ½ cups Quark
  • 1 egg
  • 2/3 cup sugar
  • 3 Tbsp flour
  • 2 Tbsp ground almonds
  • 3 Tbsp raisins

Mix dough, roll out and stretch on floured flour sack towel. Mix filling and spread onto dough. Roll up with the help of the flour sack towel. Grease cookie sheet, place roll onto it, and brush with mutter. Bake at 350f for 45-60 minutes.
