Italian Quark Rice Cake


  • 2 cups flour
  • 1 stick + 1 Tbsp butter
  • 1/3 cup sugar
  • 1 dash of salt


  • ¾ cup rice
  • 1 cup milk
  • 1 Tbsp heavy cream
  • 2/3 cup raisins
  • 2 ½ cups Quark
  • 1 ½ tsp vanilla sugar or 1 pack Dr. Oetker Vanilla Sugar
  • 2/3 cup sugar
  • ½ stick butter
  • 1 ½ Tbsp corn starch
  • 2 eggs
  • 1 dash of salt

Mix dough and place in refrigerator for ½ hour. Cook rice in milk. Soak raisins in hot water, and discard water when done. Mix Quark with sugar, vanilla sugar, butter, egg yolks, corn starch, and salt. Mix in the cooled down rice and raisins. Beat egg whites until stiff and carefully mix under. Put dough into spring pan lining walls too. Fill with filling and bake at 350F for 70 minutes.
