Dough:
- ¾ cup Quark
- 6 tbsp milk
- 6 Tbsp oil
- 1/3 cup sugar
- 1 ½ tsp vanilla sugar or 1 pack Dr. Oetker Vanilla Sugar
- 1 dash salt
- 2 ½ cups flour
- 3 tsp baking powder
Filling:
- 3 cups Quark
- ½ cup kefir
- ½ cup heavy cream
- 1 cup sugar
- 1 ½ tsp vanilla sugar or 1 pack Dr. Oetker Vanilla Sugar
- 3 eggs
- 2 egg yolks
- ½ cup cornstarch
- 1 ½ pounds blackberries
Topping:
- 2 egg whites
- ½ cup sugar
- 1/3 cup grated almonds
Mix Quark, milk, oil, sugar, vanilla sugar and salt. Mix flour and baking powder and add to Quark mixture. Roll out onto a greased baking sheet. Mix Quark, kefir, heavy cream, sugar, vanilla sugar, eggs, egg yolks, and cornstarch. Fold under washed and dried blackberries. Spread onto dough and bake for 25 minutes at 350F. Beat egg whites adding sugar one tablespoon at a time until stiff. Spread onto cake, sprinkle with grated almonds and over bake at 450F for an additional 5 minutes. Let cool before cutting into slices.
