I see that many of your recipes ask for heavy cream. Do I really need it?

Recipes have very often heavy cream added for various reasons, but can be left out when desired. Heavy cream is being used to sweeten the flavor instead of adding extra sugar. It can also be whipped and mixed under for fluffy light texture.
